14 Fredericksburg Parent and Family • December 2015 FORGOTTEN COOKIES Submitted by Drew Jernigan Makes 2-3 dozen BEAT until sti : 2 egg whites a pinch of salt ⅔ cup sugar FOLD in: 1 cup chopped pecans 1 teaspoon vanilla 1 cup chocolate chips PREHEAT oven to 350 F. DROP mixture by spoonfuls onto ungreased foil. PLACE foil directly on the oven rack (not on a cookie sheet) and TURN THE OVEN OFF. LEAVE the cookies in the oven for at least 8 HOURS (overnight is good- don't open the even door). REMOVE cookies from foil and STORE in an airtight container. Holiday MOLASSESSUGAR COOKIES Submitted by Melissa Britton ¾ cup shortening 1 cup sugar ¼ Grandma'sMolasses (gold label) 1 egg 2 teaspoon baking soda 2 cups our ½ teaspoon cloves ½ teaspoon ginger 1 teaspoon cinnamon ½ teaspoon salt PREHEAT oven to 350 F. MELT shortening in pan, remove and let cool. ADD sugar,molassesand egg. Beat well. SIFT together our, soda, cloves, ginger, cinnamon and salt. ADD to rstmixture, mix well, chill. From 1-inch balls, ROLL in sugar and place on greased cook sheet, 2 inches apart. BAKE at 350 F for 8 to 10 mintues. PINE BARK Submitted by Drew Jernigan Saltine, or other soda crackers 2 sticks butter 1 cup brown sugar 1 12 oz bag chocolate chips PREHEAT oven to 400 F. LINE a deep cookie sheet withnon stick foil. PLACE a layer of saltines on foil. In a saucepan MELT 2 sticks of butter and 1 cup of brown sugar. BOIL for 3 minutes. POUR mixture over saltines and spread to the edges. BAKE 7 minutes (Hot sugar will bubble over if cookie sheet isn't deep enough!). REMOVE and SPRINKLE with chocolate chips. A er the chocolate chips start looking wet, REMOVE the pan from the oven and spread the chocolate chips around over the top.
